Well, first off, Sarah and I had birthdays this weekend. Sarah's is the 11th and mine's the 13th. We had a big party for Sarah's that I'll blog about next, but first I want to brag about the cake I made for her.
Check this baby out!
I used the Raspberry Blackout Cake recipe from Vegan with a Vengeance and the Chocolate frosting from The Joy of Vegan Baking. I doubled the cake recipe since we were serving 16 people. Now, I know that making a layer cake doesn't seem like such a challenge, but let me explain. Japanese ovens are about the size of an American microwave. So you can only fit one pan in the oven at a time (like I even own more than that). On top of that, the heat source is some strange convection type thing, but not quite. I don't really understand how it works, but the heat source is concentrated at the top. Anyway, I had to take the cake out of the springform pan, flip it over, put it back in the pan, and continue to bake it for another 15 minutes. Then do the same with the other layer. It took me like 3 hours.
But man, was it worth it, this cake was delicious if not sugar coma inducing.

I have a counter top electric oven and it is complete pants, but somehow, through a lot of trial and error, I can knock out some alright cakes.
